  1. Add the hamburger to a medium bowl and add 1/2 teaspoon salt, pepper, baking soda and a tablespoon of water. Mix with your hands until combined and let sit for 15 minutes
  2. In a large oven proof skillet with a lid, heat oil over medium high heat. When hot, add hamburger, breaking it apart. Cook until it is browned, about 6 minutes. Drain grease if needed.
  3. To the skillet, add milk, and 1 ½ cups of water and uncooked pasta. Bring it to a simmer. Reduce heat to low and cover. Cook until pasta is al dente, about 5 minutes.
  4. Add 1 ½ cups of American cheese, 1 ½ cups of cheddar cheese along with onions, pickles, ketchup, mustard, worcestershire and ½ teaspoon salt. Cook until the cheese has melted, about 2 minutes. Season to taste. Remove from heat and sprinkle the remaining cheese on top.
  5. Place the oven rack 6 inches from the broiler and turn on the broiler function of your oven. Place the skillet under the broiler until the cheese starts to brown, about 1-2 minutes. Remove and let cool for about 5 minutes before serving. Sprinkle additional chopped onions on top.

Notes

    For a crispier topping, broil for an additional minute. Feel free to customize with your favorite burger toppings like bacon or jalapeños.
