Easy Chocolate Chip Pecan Cookies
Description
Soft, chewy, and packed with chocolate chips and nutty pecans in every delicious bite, these Chocolate Chip Pecan Cookies are as easy to bake up as they are to scarf down.
Ingredients
Instructions
- Preheat the oven to 350°F and line a large baking sheet (I use an 18×26-inch) with parchment paper or a silicone mat.
- To a large mixing bowl, add the softened butter and sugar. Cream together with a hand mixer on high until well-combined and fluffy.
- Add the vanilla extract and egg and mix again to combine.
- Combine the flour, salt, and baking soda. Use a rubber spatula to scrape any dry ingredients stuck on the sides of the bowl into the dough.
- Set aside a handful of pecans and chocolate chips and fold the rest into your dough.
- Use a large cookie scoop or 4 tablespoons of dough to shape your cookies. Make sure to leave room for spreading. I usually only bake 6 max at a time. Press the preserved chocolate chips and pecans into the top of the cookies sporadically.
- Bake on the top rack for 10-12 minutes. Allow them to cool and set before enjoying.
Notes
- You can freeze excess cookie dough before baking it to give you fresh baked cookies every time when the craving hits! Just bake them straight out of the freezer (you may need to add a few minutes).
